Potato dish with olives

I chopped the onion and put it in oil. I also added the julienne chopped pepper. I put paprika, salt and pepper.

After the onion and pepper were hardened, I put the diced potatoes.

I added 500 ml of water over the potatoes and let it boil for 20-25 minutes. I covered the pan with a lid.

After 25 minutes, I took the lid, put the olives and the broth.

I left it for another 15 minutes, on low heat.

At the end I put the finely chopped dill and I adjusted the salt and pepper dish.

I served it with baked pepper salad, from baked peppers put in the freezer in autumn. It goes well with donuts or cucumbers in vinegar, with cabbage salad, pickles or beet salad. How do you like it!


Octopus with baked potatoes

I had the impression for a long time (and I'm probably not the only one) that seafood is more suitable for an entree, a salad, something very light. But they are also very suitable for a main course, as I was about to discover. As is the baked octopus, with potatoes, lemon and oregano.

Unfortunately, in Romania we cannot say that we have seafood caught in the morning and put on the table for lunch or dinner. But there are still some pretty fresh ones. Even if they are sold as fresh seafood, you should know that they are brought by plane anyway, in ice boxes, so semi-frozen, so they can never be fresh. But, let's get over it, the idea is that you can buy seafood of reasonable quality.

That's how some octopus chicks tempted me
day, so I bought about half a kilogram (about 5-6 pieces). Must
clean very well on the outside (have a film that must be removed and
on the body, and on the tentacles), but also on the inside.

In a bowl with olive oil put 2-3 medium potatoes, cut into slices of half a centimeter and put them in the oven for 20 minutes, over medium heat (180 degrees), with 2 tablespoons of olive oil and wine white. That's because potatoes are harder to make than the octopus, and if you keep the octopus in the oven too long, it would turn into a kind of inedible rubber.

After 20 minutes, remove the potatoes, put the small octopuses in the bowl, half a sliced ​​lemon among the potatoes, 3-4 whole garlic cloves, all with peel, a few black olives and season with salt, black pepper and dried oregano . Sprinkle everything with a little more olive oil and put the dish back in the oven for another 20 minutes, over medium heat. What you get, can be seen in the picture :).


  • 4 leeks (500 g)
  • 5 tablespoons oil
  • 150 g black olives
  • 200 ml tomato paste
  • 1 onion
  • 2 medium potatoes
  • 1/2 glass of wine
  • 1 teaspoon of paprika
  • salt
  • pepper
  • fresh parsley

In a bowl I put the chopped onion in oil, the cleaned leek, washed and cut the pieces for 5 minutes, I then added the very thin sliced ​​potatoes and I hardened covered until the vegetables softened..I extinguished with the wine and I boiled until it evaporated. Then I put the olives, tomato paste, paprika, pepper and salt to taste. ).

I extinguished the fire and sprinkled the finely chopped fresh parsley. It is good hot but also served and cold. Good job and good appetite!

Today we made a potato dish & # 160 because we are trying to fast at least on Wednesday and Friday. It is very good and easy to make.

1 small glass of semi-dry white wine

Finely chop the onion stalks, cut the carrot and celery stalks into small squares and put them in 2-3 tablespoons of olive oil. When they have softened, add the glass of wine and leave on low heat until it evaporates.

Add the diced tomatoes and let them cook for 2-3 minutes with the rest of the vegetables.

Now add the diced potatoes and water to cover the potatoes, bay leaves, salt, a few peppercorns. Cover with a lid and leave for about 15 minutes on low heat, then add the olives and rice.

I advise you to use a fast boiling rice like Arborio.

Cover again and simmer until all the vegetables are soft.

Pumpkin Food (Țușpais or Ciușpais)

A Transylvanian summer food, also known as ţușpais or ciușpais.

  • 1.5 kg of zucchini
  • 2 onions
  • Dry thyme
  • 1 bunch of dill
  • Vinegar
  • Olive oil
  • 25g flour
  • 100ml cream (Covalact 25%)
  • 50ml milk
  • Coarse salt, freshly ground pepper

Peel a squash, grate it and cut it in half. What is left is given on the large grater. Put in a bowl, add a little salt and a tablespoon of vinegar. Interfere.

Fry the onion in oil until it becomes translucent. Place the zucchini over the onion with the drained juice. Add dried thyme, salt and pepper to taste. Leave on medium heat for 10-15 minutes, stirring occasionally but carefully.

Mix the cream with the flour. When it has mixed well, add the milk and mix everything. Pour the cream over the pumpkin and stir immediately so as not to make lumps.

Serve immediately, with finely chopped dill sprinkled on top. It goes simple or next to meatballs or steak.

  4. Place the chicken in a pan or in a soufflé form, grease with 2 tablespoons of oil and pour the wine and bake in the oven for 30 minutes.
  5. Peel the potatoes, wash and cut in half lengthwise.
  6. Remove the tray from the oven. Place potatoes, 3 cloves of garlic, 4 tablespoons of bay leaves and olives around the chicken.
  7. Salt and pepper and bake for another 40 minutes
  8. The chicken with olives and potatoes is served directly from the tray.
