  1. Preheat oven to 180 C / Gas 4. Lightly butter a 2 litre baking dish.
  2. Arrange fish fillets in the bottom of the prepared dish and sprinkle with salt and pepper to taste. Layer onion slices over fish. Spread cream of mushroom soup over all and top with cheese.
  3. Bake in preheated oven for about 40 minutes or until bubbly and fish flakes easily with a fork.

Because I love haddock, I am always trying new fish recipes. This one was good. Next time I may add a little something because it felt too oniony and maybe a little bland. Maybe broccoli would do it. Also, this should definitely be served with potatos not rice. I won't make that mistake again. It took away from the wonderful fish flavor!-26 Oct 2002

Preheat oven to 350 degrees F (175 degrees C). Lightly butter a medium or large baking dish.

Rinse and dry fillets. Season with 1 teaspoon salt and 1/8 teaspoon pepper.

In a skillet or frying pan, melt butter over medium heat. Saute onion in butter until golden. Stir in flour until completely incorporated. Stir in mustard, 1/2 teaspoon salt, light and heavy creams. Cook until thickened, stirring constantly. Remove from heat and stir in cheeses. Pour sauce over fish and sprinkle with paprika.

    When I was growing up, my mom did most of the cooking. Inspired by her Italian grandmother and ancestors, she made delicious pasta dishes, baked bread and comforting casseroles. My dad, on the other hand, would only cook on occasion and it always revolved around the same thing – fresh fish. Much to my mom’s chagrin, these nights felt very special as a kid because dad was cooking. Not only was he cooking, but his excitement about the fish he had selected at the fish market was contagious. One of the reasons he would get so excited is because he would buy it from a fish market where he had worked for years. Sometimes he would bring me into the market with him and I’d watch him catch up with his old friends still working there. They were always sure to tell my dad what the best fish of the day was. And more often than not, that fish was haddock.

    This recipe for sheet pan haddock reminded me of my dad and how food felt like an adventure on those nights he would cook. As I’ve gotten older, fish is still one of my favorite things to eat and so I’ve discovered ways and recipes that make preparing fish easy and delicious. Sheet pan recipes are a great route to go if you want a delicious, well-rounded meal, not a lot of dirty pots and pans, and a beautiful presentation. In this recipe, the haddock is topped with a tasty combination of Swiss chard, sun-dried tomatoes, olives and capers that gives it a delicious Mediterranean flare. The fish is also rubbed with three of my favorite spices (paprika, oregano, and thyme), which are all staples of Mediterranean cuisine. As the haddock cooks on the sheet pan with the other ingredients, the flavors all come together and the final result is delicious. Oh and I forgot to mention… this recipe only takes about 20 minutes! Pair it with a dry white wine like a sauvignon blanc or pinot gris and enjoy.


    Haddock and spinach pasta bake

    Preheat the oven to 180°C, fan 160°C, gas 4. Cook the pasta in a pan of boiling water for 2 minutes less than the pack instructions, then drain, rinse in cold water and set aside.

    Meanwhile, melt the low-fat spread in a large frying pan over a medium heat and fry the sliced leek for 2-3 minutes. Add the flour, stir well, then gradually stir in 200ml milk. When it has thickened, add the spinach to the sauce and stir until it has begun to wilt. Stir in half the cheese, some freshly ground black pepper, the remaining milk and the cooled pasta. Leave to cool completely before stirring in the fish pieces.

    Spoon the mixture into a 2-litre baking dish and top with the remaining grated cheese.

    Cover the dish in kitchen foil. Bake for 25 minutes. Remove the foil and continue cooking for 10 minutes or until the sauce is bubbling and the fish is cooked through.

    Creamy Haddock Bake recipe - Recipes

    Heat your oven to 200C/Fan 180C/Gas 6. Add 1 tbsp oil to a roasting tin and slide it into the oven to heat up for 5 mins. Peel the potatoes. Chop into chunks. Tumble into the tin. Season with salt and pepper. Turn a few times to coat in the oil. Roast for 45 mins till golden and crisp.

    Trim the very top and bottom off the leeks. Halve them and rinse out any grit. Finely slice them. Warm a large frying pan for 1 min. Add the leeks with a splash of water. Season. Cover. Cook for 5-8 mins till the leeks have softened, stirring now and then. Tip them into an ovenproof dish.

    Add the spinach to the pan. Cook and stir for 2-3 mins to wilt the spinach. Tip into a colander and press down with the back of the spoon to squeeze out any excess water. Add to the leeks.

    Zest the lemon and add that to the dish. Finely chop the dill stalks (keep the leaves for later). Add to the dish. Season with salt and pepper and stir to mix the veg all together. Lay the haddock fillets on the veg.

    Stir the cream and 2 tsp mustard together. Pour over the haddock. Loosely cover the dish with foil. Slide into the oven and bake for 15 mins on the shelf below the potatoes.

    Take the foil off the haddock dish. Scatter the almonds over the top of the haddock. Bake for another 4-5 mins till the almonds are browned and the haddock fillets are cooked through.

    Serve the creamy haddock bake with the veg and roast potatoes. Garnish with the dill leaves and serve with wedges of the zested lemon for squeezing.

    For quicker cook potatoes, chop in to small cubes. Boil for 5 mins till just soft. Drain and tumble into the hot oil. Roast in a very hot oven for 20 mins, tossing halfway through.


    Place 4 small, shallow flame proof dishes on a baking tray. Make the gratin topping first by mixing the breadcrumbs, 10g cheese and parsley and set aside.

    Mix 5 tbsp milk with the cornflour in a small bowl until smooth and set aside.
    Pour the rest of the milk into a large saucepan and add the onion, bay leaf and lemon peel. Cut the fish fillets in half, place them skin-side down in the pan and bring to a gentle simmer over a medium heat.

    Cook for 3 minutes, basting the fish occasionally with the milk until only JUST cooked. Off the heat, cover the pan with a lid and leave to stand for 5 minutes, the fish will continue to cook.

    While the fish is cooking, half fill a small pan with water and bring it to the boil. Add the broccoli florets, bring the water back to the boil and cook for 2 minutes. Drain the broccoli, then rinse in a sieve under cold running water and drain again.

    Place a colander over a clean non stick pan and drain the fish, collecting the milk in the pan. Stir the cornflour mixture into the warm milk and heat gently over a medium heat until it has thickened, stirring continuously. bring to a simmer, continue stirring until it is thick & smooth. Stir in the remaining cheese and mustard then cook for another 2 to 3 minutes, stirring. Season to taste and stir in the broccoli florets.

    Flake the fish into chunky piece , throw away the skin, onion, bay leaf and lemon peel. Add the chunks of fish to the pan and stir gently.

    Divide the fish mixture between the dishes. Sprinkle with the gratin mixture and bake for 15-20 minutes or until the tops are nicely browned, the fish is hot and the sauce is bubbling.

    Serving Size: Makes 4 individual dishes or can be cooked in 1 large dish.


    4. Make the sauce and put the pasta on

    With the fish out of the milk, you’ll have left a wonderfully smoked fish liquid that is just begging to be made into a creamy sauce. Firstly, put the pasta on to cook as per the packet instructions and then move onto the sauce.

    To do this, pour the smokey milk through a sieve into a saucepan to remove any milk froth. Next, add 3 dessertspoons of double cream. You can also add a knob of butter now if you like but this is optional. Now you need to thicken the sauce.

    To thicken the sauce you could make a roux in a separate saucepan and add the sauce slowly. However, I took the easy option and just used some cornflour and water as the thickening agent. Once the sauce is a nice creamy texture add the smoked haddock, prawns, and 3/4 of the parsley. Heat this through and then season to taste.

    • 1 lb 450 g broccoli, small florets

    Someone suggested making with chicken. it would work with chicken, but you'd probably need to cook it for 30-40 minutes, even if you work it with a meat mallet, which I'd suggest.

    Plus a question has anyone ever hit a plateau I have and do not know what to do to start losing

    Heavy whipping cream will contain at least 36% milkfat. You can use that as a comparison for the cream you used.

    This was a delicious casserole! I used cauliflower, onions, spinach, mushrooms, and Parmesan with the original recipe. Except the broccoli cuz I didn’t have any. It was a bit liquidy but I think that can be adjusted. Love the taste the capers add. Added this as a favorite meal! For sides I cooked fresh long string beans sautéed in garlic and butter.

    Although I know it's for whitefish - do you think this recipe would work with Salmon?

    We have not tested this recipe with salmon. If you think salmon in a creamy mustard sauce sounds delicious, then I bet that would be a good substitute.
