Bruschetta with aubergines are an easy easy recipe to bring a delicious appetizer to the table without taking too long. Definitely more refined than the classic bruschetta with tomatoes but quick and simple to make. From today and for the whole month of August I will put more practical recipes in full Summer style and even if present with the recipes and on Facebook I will not be able to respond to all the comments in real time because I need to unplug and dedicate myself to Elisa and Ivano in an exclusive way;) So in the morning, recipe, a quick reading at the post office, a ride on the Facebook page and then stop;) I hope you too can spend a few relaxing days with your family. How to make bruschetta with eggplant

Wash and peel the aubergine, then cut it into cubes.
Brown it over medium heat in a pan with a drizzle of oil for about ten minutes, then add chopped tomatoes and chopped basil, season with salt and cook for another 5 minutes.

Meanwhile, cut the bread into slices and toast it on a very hot grill pan.
Spread the aubergines on toasted bread, add the stracchino and melt it in a preheated oven at high temperature for 3-4 minutes.

Serve the bruschetta with eggplant immediately.
