Fried brain

The pork brain is washed, then scalded in salted water for about 5 minutes, then removed in a strainer. After draining well, mix with a fork until it becomes a paste. Add eggs, flour, salt, pepper and mix well.

Heat oil in a pan and with a spoon form meatballs, fry until nicely browned, then remove on absorbent napkins.
